Universal dough in butter for any pies, including cabbage, we cook like this.

Ingredients for the dough (yield - 10 pies):

1 egg; 100 ml sour cream; 100 g of melted and chilled butter; about 250 g of flour (the dough should be soft and elastic); 1/2 teaspoon salt and sugar.

Knead a flexible and soft dough from all the ingredients. We collect in a lump, wrap with cling film and send for an hour in the refrigerator. Looking ahead, let's say that pies are baked from such a dough with filling (meat, vegetable, cottage cheese) for 20-25 minutes at a temperature of 180-190 degrees.

While the dough is chilling, prepare the cabbage filling. To do this, finely chop half a small head of cabbage, chop the onion and, if desired, grate a couple of carrots. Pour 2 tbsp into the hot skillet. tablespoons of vegetable oil and fry the onion until soft, add carrots and cabbage. If all the cabbage does not immediately fit into the pan, simmer in portions until soft. Salt and pepper the vegetables while frying, add oil if needed, you can also add a few tablespoons of tomato paste. 

The filling is ready, back to the test. The work surface should be dusted with flour. Roll out the dough into a layer, 3-4 ml thick. Using a large glass or saucer, cut out circles. You can do it differently. Form a thick sausage from the dough and cut into equal pieces. Form each piece into a ball and roll it out with a rolling pin.

 

Place a tablespoon or two of filling in the center of each circle.

 

We collect the edges of the pies and carefully pinch.

 

Lay the pies on a baking sheet lined with parchment. Lubricate the surface of the pies with a beaten egg using a pastry brush. We put the pies in the oven for 20-25 minutes until golden brown, temperature - 180-190 degrees.

 

Cool the finished pies and put them on a large dish. The broth is perfect for pies!

By the way, instead of cabbage, you can add any minced meat with onions and spices. Add a piece of butter (in each pie) to the minced chicken and turkey while sculpting the pies, so they will be juicier.
