Method of preparation :
Make a fruit sauce by mixing the water with the frozen raspberries and strawberries, add the granulated sugar and cook for 3 minutes. Then grind with a blender and strain the puree.
Add the grated rind and squeezed lime juice to the mascarpone, as well as the powdered sugar and mix until smooth.
Cut the pineapple into thick wide strips in which to wrap the mascarpone, giving the shape of ravioli.
Arrange them on a plate, garnish with fresh strawberries and mint leaves, pour the sauce and sprinkle with powdered sugar.
