Necessary products:

 

for the dough

 

  • 2 and 1/4 tea cups flour
  • 1/2 tablespoon salt
  • 1/2 tablespoon yogurt
  • 1/2 teaspoon water

 

for the filling

 

  • 350 grams of minced meat
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 chopped garlic cloves
  • 1 tablespoon tomato paste
  • 3-4 stalks of chopped coriander
  • 1 tablespoon smoked paprika
  • 10 grams of ground cumin
  • 1 cup chopped, scalded spinach
  • 2 stalks of fresh onion
  • 2-3 leaves of fresh mint
  • 2-3 leaves of fresh parsley
  • 2-3 lemon slices and olives for decoration

 

Method of preparation:

 

In a bowl, mix the flour, salt and add the yogurt mixed with the water. Make dough and let it rest. Cut it into pieces and roll out the crusts into rectangular shapes. In a pan, heat olive oil and fry minced meat and onions.

 

Season with cumin, black pepper and add garlic, tomato paste. Stir and add the finely chopped parsley, coriander, spinach, mint and smoked paprika. Stew the mixture for 3 minutes and cool. Spread the filling on the dough crusts, sprinkle with chopped green onions, wrap all the edges and push them so that they are sealed.

 

Arrange the resulting pockets in a tray lined with parchment paper and bake in a preheated 200 degree oven for 30 minutes. Cool, cut into two pieces and serve the pockets, garnished with lemon slices and olives.
