How To Cook Pork Fillet With Mustard Sauce And Maple Syrup - Recipe

Pork fillet is a good healthy option as it contains almost no fat. It is important not to cook for too long so that it does not dry out.

Maple syrup and mustard give a pleasant sweet-salty taste to this dish. The gentle note of sage contributes to the warm winter touch.

Required products :

  • 3 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 450 grams of pork fillet
  • 2 teaspoons olive oil or other fat
  • 1/4 tea cup apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 and 1/2 teaspoons fresh sage

Method of preparation :

Preheat oven to 220 degrees.

Mix in a small bowl 1 tablespoon of Dijon mustard, salt and pepper and season the meat with the resulting mixture.

Heat olive oil in a large skillet over medium heat. Fry the pork for about 5 minutes on all sides. Transfer the pan
to the oven and bake the fillet for about 15 minutes or until the temperature in the center of the meat is 62-63 degrees. Remove from the oven and 
place on a cutting board for 5 minutes.

Put the pan on medium heat and pour the vinegar. Boil and scrape with a wooden spoon the remnants of frying meat.
Add the maple syrup and the remaining 2 tablespoons of mustard and bring to the boil, then reduce the heat and simmer until the sauce
thickens.

Cut the meat and serve it, seasoning it with sweet and salty sauce and sage.
