How To Cook Pork In Fresh Milk With Prosciutto And Garlic - Recipe

Required products :

  • 900 grams of boned pork shoulder
  • 4 tea cups (1 liter) whole milk
  • 40 grams of butter
  • 40 grams of prosciutto, cut into small cubes
  • 1 onion, finely diced
  • 1 crushed clove of garlic
  • salt and pepper to taste
  • 2 bay leaves
  • rosemary to taste

 

Method of preparation :

Remove excess fat from the meat. It is good to wrap it with baking thread to keep its shape. Rub with salt and pepper. Heat the milk and just before it boils, remove the pan from the heat.

Melt the butter in the pan in which you will cook the meat (it is recommended to use one with a thick bottom, not with a non-stick coating).

Lightly fry the prosciutto with the onion and garlic, stirring until the onion is soft and translucent. Add the meat, let it cook evenly until it catches a nice tan on all sides.

Onions and prosciutto will turn brown and may stick to the bottom.

When the meat is cooked on all sides, pour the hot milk and add the bay leaves.

Simmer for about 1.5 - 2 hours or until the meat softens and the milk not only decreases significantly, but is crossed, for this purpose put a little lemon juice or wine vinegar.

 

Check the readiness of the meat with a fork, it should come out easily after stabbing into it. You can add a little hot milk in case it decreases too quickly. If there is more than necessary, but the meat is ready, just transfer it to another dish.

It is good to let the meat rest for at least 10 minutes before slicing and serving.

You can also season with coriander, oregano, basil or dill seeds.

 

Serve with sauteed vegetables or crispy salad.
