Required products :

  • 500 grams of pork kidneys
  • 1-2 onions
  • salt and pepper to taste
  • 1 tablespoon flour
  • 50 grams of butter

 

Method of preparation :

Clean and cut the kidneys crosswise, rinse them under running water. Then soak for 18-20 hours in cold water, which is changed from time to time. Towards the end of this period, pour a spoonful of vinegar.

Then place the pan on the hob and let the liquid boil. Then drain it and rinse the by-product under running water.

Return the kidneys to the pan, place on the stove and cook until cooked through (60-80 minutes).

Remove from the broth, allow to cool to room temperature and cut into pieces.

While the kidneys are cooling, make the sauce.

Melt the butter in a suitable bowl and add the flour. Stir, pour 50-70 milliliters of broth and cook for another 5 minutes.

Meanwhile, quickly wash, chop the onion and pour it into the oil. Stir, add the kidneys and after a few minutes reduce the heat.

Season, stir again and fry until done (about 3-5 minutes).

You can serve the pork kidneys as a supplement to any side dish, be it vegetable, cereal or pasta.

Optionally, after all the steps of preparation described above, you can stew the product in tomatoes or tomato sauce, this will give the dish an individual flavor.
