Required products :

1 kg pork neck (whole piece)
2 quinces
2 tablespoons mix of suitable favorite spices
1/2 lemon
200 ml dry red wine
2 teaspoons sugar (if the quinces are very sour)
black pepper and salt to taste
aluminum foil

 

Method of preparation :

Wash the pork neck, dry it with paper and make incisions on it that resemble an accordion.

 

Fill them with spices.

 

Place the meat in a tightly closed container and store in the refrigerator for 3 hours. The longer it is marinated, the tastier the dish will be. The best option is to keep the pork overnight with the spices.

Peel the quinces and cut them into pieces, clean the seeds. Drizzle the fruit with lemon juice.

 

At this stage, turn on the oven to preheat (180 degrees).

Fill the gaps in the meat with the quince slices.

 

Cover the pan with foil, grease it with oil and then put the meat on it.

 

Place in the oven for 10 minutes to brown slightly.

 

Then pour the wine directly into the vessel.

 

Return to the oven, wrap the pork with foil and increase to 200 degrees.

 

Leave the dish to bake for an hour.
