Required products :

  • 2.5 kilograms of boneless pork shoulder
  • 3 tablespoons fennel seeds
  • 8 cloves garlic, pressed
  • 5 tablespoons fresh rosemary, finely chopped
  • 5 tablespoons fresh thyme, finely chopped
  • 2 tablespoons kosher salt
  • 1 1/2 tablespoons freshly ground black pepper
  • 1 1/2 tablespoons paprika
  • 1/2 teaspoon olive oil
  • 4 teaspoons homemade chicken broth
  • 2 tea glasses of dry white wine

Method of preparation :

  • Lightly toast the fennel seeds in a small saucepan or skillet over medium heat for about 3 minutes. Immediately transfer them to a mortar and grind them finely.
  • In a small bowl, combine the garlic, rosemary, thyme, salt, black pepper, paprika and freshly ground dill seeds. Stir well to distribute evenly.
  • Spread the pork shoulder and carefully dry it with paper towels.
  • Use a meat hammer to thin it slightly, then season it on all sides, rubbing the spice mixture.
  • Roll the shoulder into a roll, trying to keep the garlic and herbs inside.
  • Wrap with twine, transfer to a baking dish and store uncovered in the refrigerator for 24 hours.
  • Drizzle the pork roll with olive oil and add the wine and broth to the pan.
  • Bake in a preheated 230 degree oven for about 20-30 minutes.
  • Cover the pan with aluminum foil, reduce the temperature to 150 degrees and bake for about 3 hours.
  • Transfer the pork chops to a wooden board and let it rest for 30 minutes before cutting.
  • Serve with garnish if desired and a glass of wine.
