Required products :
500 pork loin
200 g mushrooms of your choice
250 g frozen spinach
4 garlic cloves
100 g mozzarella
2 onions
oil
few sprigs thyme
salt and ground black pepper
Method of preparation :
Cut the fillet lengthwise in the middle without cutting all the way to get a wide base.
Sprinkle with salt and ground black pepper on both sides.
Fry 2 of the garlic cloves in hot oil until golden brown. When this happens, take them out of the bowl and pour the mushrooms into it. Fry them, season to taste.
In a separate pan, fry the remaining 2 cloves of garlic and add the frozen spinach. You can remove the garlic, but you can also leave it in the filling. Pour a little water and let the leaves cook for 4-5 minutes.
Cut the mozzarella into thin slices.
Cut the onion into circles, add salt and fry until soft in hot oil, adding the thyme.
You should shape the roll.
Spread the spinach, mushrooms and strips of cheese on the meat base.
Carefully roll up a roll, which you tie with thread. Bake it in a pan on all sides until a yellow crust forms.
Spread the onion on the bottom of a pan, put the roll on it, cover the dish with foil and bake the dish in a preheated oven to 180 degrees for about 30-35 minutes. Then remove the coating and return the pork for 10 minutes in the oven to bake on top.
Serve with onion sauce and vegetable salad.
