How To Cook Pork Schnitzel In Tomato Sauce With Mozzarella - Recipe

Required products :

  • a few sprigs of basil
  • a few tablespoons of olive oil
  • 3 cloves garlic
  • 3 anchovies
  • 1 chili pepper
  • 800 grams of chopped tomatoes in their own juice
  • salt and pepper to taste
  • 200 grams of breadcrumbs
  • a few sprigs of thyme
  • a handful of grated parmesan
  • 1 lemon
  • 150 grams of sifted flour
  • 4 pork schnitzels (each weighing 200 grams and 2 centimeters thick)
  • 2 large eggs
  • 125 grams of mozzarella


Method of preparation :

Saturate the basil stalks and soak the leaves in water to keep them fresh.

Heat olive oil over medium heat, add chopped basil, thinly sliced ​​garlic and anchovies. Cook for a few minutes and add the chili pepper, which you pierce in several places.

After about a minute, add the tomatoes, bring the mixture to a boil, reduce the heat and let the products simmer for another 20 minutes. Season with salt and pepper.

Mix in a bowl the breadcrumbs, thyme leaves, grated thyme and lemon zest.

Roll each schnitzel in flour with salt and pepper, then dip in the beaten eggs and finally in the breadcrumbs.

Fry them for a few minutes on each side until they turn red, and remove on paper to remove excess fat.

Pour the tomato sauce into a pan, arrange the pork and mozzarella (in pieces) on it and sprinkle with basil leaves.

Bake in a preheated 200 degree oven for about 20 minutes until a dark brown crust forms.
