How To Cook Pork Tenderloin In Prosciutto With Fennel And Onion - Recipe

Required products :

  • 4 small fennels, chopped
  • 2 red onions, chopped
  • 3 tablespoons olive oil
  • salt and pepper
  • 2 pork fillets (about 1.5 kg in total)
  • 2 tablespoons Dijon mustard
  • 2 teaspoons thyme
  • 200 grams of prosciutto, thinly sliced

Method of preparation :

Preheat oven to 210 degrees.

Stir in onion, fennel and 2 tablespoons of oil and pour into a large pan. Season with salt and pepper and bake for 5 minutes.

Meanwhile, smear the meat with mustard, sprinkle with thyme. Wrap both fillets in pancakes, cover tightly if possible.

Heat the remaining 1 tablespoon of olive oil in a pan and put the meat to seal for 2-4 minutes (start with the side from which the ends of the panties overlap). Turn and fry for another 2-4 minutes until golden.

Push the vegetables to the edges of the pan and place the two pork rolls in the center. Bake until ready, about 10-15 minutes (test with a thermometer, when the meat reaches 80 degrees in the center, then it is ready). Let the pork rest for 5 minutes before slicing.
