Required products :

  • 1.5 kilograms of boneless pork breast
  • 120 grams of hot marinated hot peppers, drained
  • 2 teaspoons hot pepper powder
  • 1 teaspoon salt
  • 1/2 teaspoon salt and pepper
  • 1 large can of 800 grams of pineapple, drained of juice
  • 1 fresh hot jalapeno pepper, finely chopped
  • 2 tablespoons cornstarch (natural)

Method of preparation :

Make pockets in the meat, cutting it almost completely in several places. Fill with canned peppers.

Combine the spices in a bowl and sprinkle evenly over the piece of meat, then rub the flavors with your fingers.

Put half of the pineapple and jalapeno peppers in a cast iron pot (or casserole), place the meat on top and add the remaining pineapple and pepper. Cover with a lid and bake for about 2 - 2 1/2 hours at 160 degrees until the meat is cooked.

Transfer the piece of meat to a plate and wrap with foil to keep it warm.

Add the starch to the pineapple, stir and heat in the oven or on the stove for 1 minute to thicken.

Cut the meat and serve, topped with the spicy pineapple sauce.
