Turn the potatoes into irresistible bites with lemon and capers, which will give a bright taste to this appetizer.

Required products :

  • 12 small red potatoes, cut in half
  • 2 teaspoons olive oil
  • 1/2 cup sour cream
  • 2 tablespoons chopped chives, chopped (or colored salt to taste)
  • 2 tablespoons melted butter
  • 2 tablespoons capers, drained and chopped
  • 1 and 1/2 teaspoons lemon juice
  • salt and pepper to taste
  • 2 tablespoons parmesan, grated

Method of preparation :

Turn the oven to 230 degrees.

Coat the potatoes with olive oil and arrange them in a pan covered with baking paper. Bake for 20 minutes, then turn them over and bake for another 10 minutes on the other side. Remove and allow to cool.

Preheat the oven to a very high temperature by placing the grill on the top shelf of the oven.

With a small spoon, carve the inside of the potato, being careful not to overdo it so that it does not fall apart. Mix in a bowl the inside of the potatoes, sour cream, 1 tablespoon of chives (or colored salt), butter, capers, lemon juice, salt and pepper to taste.

Fill the carved potatoes with the mixture, sprinkle with Parmesan and chives. Bake for 2 minutes or until the parmesan is melted and lightly browned. Remove from the oven and serve.
