How To Cook Potato Salad With Bacon And Sweetened Eggs - Recipe

Potato salad is a classic, but now we offer you a version that has eggs sweetened with sugar. The combination is interesting and unusual, but you may like it.

Required products :

  • 4 tea cups diced potatoes
  • 4 thin slices of bacon, finely chopped
  • 1/2 cup finely chopped onion
  • 1/2 cup finely chopped green pepper
  • 2 broken eggs
  • 4 tablespoons sugar
  • 1/4 tea cup of vinegar
  • 1/4 teaspoon black pepper
  • 2 hard boiled eggs, chopped
  • parsley or green onions to serve as desired

Method of preparation :

Boil the potatoes in salted water until soft (about 15-20 minutes). You don't have to overcook them to keep them from falling apart. Drain and set aside while you prepare the other products.

In a pan, fry the bacon until crispy, then add the onion, pepper and fry for another 3 minutes.

Mix the beaten eggs with the vinegar, sugar and black pepper. Pour over the bacon and vegetables and fry until done, stirring constantly.

Pour over the potatoes.

Serve the salad, garnishing it with hard-boiled eggs and green onions.

* You can use ordinary potatoes or red, whether you peel them or not is a matter of preference. Using red potatoes with peels will add extra color to the salad, which will make it more attractive to serve.
