Necessary products:

 

  • 30 grams of butter and extra for spreading
  • 3 tablespoons breadcrumbs for sprinkling
  • 300 grams of boiled potatoes
  • 80 grams of grated cheddar or yellow cheese
  • 30 grams of grated Parmesan cheese
  • 2 tablespoons fresh onions
  • 2 eggs
  • black pepper and salt
  • 6 tablespoons fresh milk
  • red pepper for sprinkling

 

Method of preparation:

 

Preheat the oven to 220 degrees, grease refractory muffin tins and sprinkle with breadcrumbs. Peel the potatoes, put them in a bowl and puree, using a press.

 

Add parmesan, onion, black pepper, egg yolks and mix until smooth. In a pan, mix the butter and milk, heat and pour into the mixture.

 

Beat the egg whites on hard snow and carefully add to the potatoes, mix and distribute in the tins.

 

Bake the soufflés for 20 minutes until golden brown, cool and serve, sprinkled with paprika.
