First make the puree in the standard way: boil the potatoes, drain the liquid, mash them together with the butter and milk.
Using a wooden spatula or mixer, whisk the mixture thoroughly to make it airy.
Then add diced yellow cheese and pieces of smoked salmon.
Continue adding the yolks. Put them one by one and mix thoroughly after each. Taste and add salt if necessary.
Beat the egg whites with a little salt until you get a thick white foam, which you combine with the puree.
Lubricate the bottom and walls of a suitable shape with a non-stick coating. Pour the potato mass into it and place in a hot oven.
About thirty minutes at a temperature of 180 degrees are enough to get a delicious air souffle.
When ready, remove from the pan and arrange with olives and parsley.
Serve warm, add mayonnaise when serving.
