How To Cook Puff Pastry With Egg Cream And Powdered Sugar - Recipe

Required products :

  • 500 grams of puff pastry
  • powdered sugar

For the egg custard:

  • 3/4 tea cup of fresh milk
  • 3/4 liquid high-fat cream (35%)
  • 4 egg yolks
  • 1/2 teaspoon sugar
  • 2.5 tablespoons flour
  • 1/2 teaspoon vanilla extract


Method of preparation :

Mix the milk and liquid cream in a suitable container, which you place on the stove and heat the liquid without allowing it to boil. Remove from the heat and cool slightly.

In another bowl, place the egg yolks, sugar, flour and vanilla extract. Gradually start pouring the warm milk into this combination, stirring constantly with a whisk.

Put the cream on low heat and again, stirring constantly, cook until thickened (5 minutes).

Then transfer the cream to a bowl, cover with cling film so that no crust forms on the surface, and store in the refrigerator for three hours.

Turn the oven to 180 degrees. Cut the dough into 12 equal squares and arrange them in a tray, the bottom of which you have covered with a sheet of parchment. Pierce the bases with a fork in several places and sprinkle with granulated sugar. Bake for 20 minutes. During this time, the dough will swell and acquire a light golden color. Then remove the pan from the oven and wait for its contents to cool.

Cut the puff squares in half horizontally in the middle. Spread the cream on the lower pieces using a pastry syringe. Place the top pieces on the filling and sprinkle with powdered sugar.
