Necessary products

for the base :

  • 1 cup graham biscuits (crushed)
  • 3 tablespoons sugar
  • 1/2 teaspoon ginger powder
  • 1 egg white
  • coconut oil or other grease for spreading

for cream :

  • 230 grams of cream cheese, soft
  • 3/4 cup sugar
  • 1 tablespoon vanilla extract
  • 2 teaspoons lemon juice
  • 1/2 teaspoon ginger powder
  • 1 can of pumpkin (or 425 grams of boiled pumpkin)
  • 3 eggs
  • 1 tablespoon brown sugar

Method of preparation :

Preheat oven to 180 degrees.

To prepare the base, use a fork to mix the crushed graham biscuits, sugar, ginger and egg white. Pour the mixture into a pan greased with coconut oil and press on the bottom to form a loaf. Bake for 8 minutes, remove and cool.

Reduce the temperature to 150 degrees.

To prepare the cream, beat the cheese with a cream mixer until smooth. Add the sugar, vanilla, lemon juice, ginger and pumpkin and stir until creamy. Add the eggs one by one without stopping the mixer. Pour the mixture into the pan on the base and bake for 50 minutes or until done. Turn off the oven and open the door slightly to cool the cheesecake (about 30 minutes), then take it out of the oven, cover and let stand for 8 hours. 

Sprinkle the dessert with brown sugar, cut into pieces and serve.
