Required products :

3 teaspoons flour
200 grams butter
3 eggs a
pinch of salt
1 kilogram pumpkin
1.5 teaspoons sugar
200 milliliters of high-fat liquid cream (or milk)
cinnamon and vanilla to taste

Method of preparation :

Sift the flour into a deep bowl, add a pinch of salt and add the softened butter. Grind the mixture with your palms to get fine crumbs. Then beat one egg and knead the dough, which you wrap in plastic wrap and put in the refrigerator for an hour.

Meanwhile, make the filling. Peel a squash, grate it and slice it into small cubes. Puree with a blender.

Take the dough out of the fridge and roll it out, forming a circle with a diameter suitable for the shape you will use for baking. Place the dough in the bowl and fold the edges to make it higher than the base or cover the dough and the walls of the pan with dough. Punch the surface in several places with a fork and bake in the oven for 15 minutes at a temperature of 190 degrees.

Return to the filling. Add the remaining 2 eggs, sugar, cream, cinnamon and vanilla to taste to the pumpkin puree. Beat everything with a mixer and spread the mixture evenly on the dough base.

Bake the pie at 180 degrees for about 50 minutes (or until golden brown).
