Required products :

1 pumpkin about 2 pounds

1 onion

3 cloves garlic

1 tomato or 2 tablespoons tomato paste

1 stalk of celery

sea ​​salt

freshly ground black pepper

parsley

1 small hot pepper (chili)

olive oil

 

Method of preparation:

Finely chop the parsley, celery, onion, garlic and pepper (cleaned of seeds). Stew them in olive oil.

Peel a squash, grate it and cut it into small pieces. Add it to the stewed spices, then add peeled and diced tomatoes or tomato paste.

Pour 2 teaspoons of hot water (you can use vegetable or chicken broth) and let the products simmer for 15 - 20 minutes until the pumpkin softens nicely. When this is done, puree everything with a blender and return to the pan. Season with salt and pepper and bring to a boil.

Cream soup is ready, you can serve with croutons, pumpkin seeds, sesame seeds, prunes or with an addition of your choice.

The next day after cooking it is even tastier.
