How To Cook Pumpkin Hummus With Garlic - Recipe

Required products :

  • 1 pumpkin (about 1 kg)
  • 1 teaspoon olive oil + 2 tbsp
  • 1/2 cup garlic cloves
  • 2 hot peppers, cleaned of seeds
  • 1/4 cup tahini
  • 3 tablespoons lemon juice

Method of preparation :

Preheat oven to 170 degrees.

Cut the pumpkin in half, clean it of seeds. Spread it with 2 tablespoons of olive oil and bake it with the crust up in the oven for 1 hour until soft.

Fry the garlic, hot peppers and remaining olive oil on a very low heat on the stove for about 30-40 minutes until soft. Garlic should be very light brown, do not allow the temperature to rise and get frying.

Remove the pumpkin core and put it in a blender. Add garlic, olive oil, pepper, tahini and lemon juice.

Puree until smooth for 1 minute.

Season to taste with salt and pepper. If your texture seems thick, add a little water to reach the desired density.

When serving, add a little yogurt on the slice, roasted pumpkin seeds and coriander.
