Pumpkin desserts are prepared mainly on holidays, which is why this recipe is different to impress everyone. Even those who don't like pumpkin will be amazed at how delicious this ice cream pie is. He may even become one of their favorites.

Required products :

for the base:

  • 30 small vegan gingerbread cookies
  • 2 tablespoons raisins
  • 2 tablespoons melted coconut oil

for cream:

  • 1 cup canned pumpkin puree
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon nutmeg
  • 4 cups low-fat vanilla ice cream, slightly thawed

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 180 degrees. Grease a pie pan with 1 tablespoon of coconut oil.

the basis:

In a food processor, blend the vegan ginger biscuits and raisins until finely chopped, pour 1 tablespoon of coconut oil and stir. Pour into the pan and shape the base at the bottom, pressing with your hands. Bake until done, about 10 minutes, and allow to cool.

the cream:

Mix until smooth, in a large bowl, pumpkin puree, brown sugar, cinnamon, ginger and nutmeg. Add the ice cream and stir until blended. Pour over the base and freeze for at least 2 hours. Thaw for 20-30 minutes before serving.
