Spread the lavash peel on the kitchen counter and spread the coarsely grated raw pumpkin, chopped onion, season, add the mozzarella and roll.
Place it in a tray on a sheet of parchment paper, smear the surface of the roll with kefir or yogurt. Sprinkle with both types of seeds and bake the strudel until golden brown at medium oven temperature (ie 180 degrees).
You can make a sweet option without using onions, and smear the surface with melted butter and sprinkle with sugar and cinnamon.
In both cases you will enjoy a delicious pumpkin strudel.
