Method of preparation :
Mix the cream, lemon juice and dill well in a small bowl to obtain a homogeneous mixture. Season to taste and cover so that it does not dry out, then refrigerate until serving.
Add salt to the zucchini and place in a clean kitchen towel. Wrap the towel around them and squeeze as much of the liquid into the vegetables as you can.
Transfer to a bowl, add the eggs and stir the mixture. Add onion, quinoa, bread crumbs, grated parmesan and hot spice if used. Finally add the chopped parsley, salt. Cover and store for 2 cups in the freezer.
Heat olive oil or vegetable oil in a large skillet.
Take about 2 full tablespoons of the mixture and form meatballs by pouring the contents directly into the pan and using the spoon to form flat meatballs.
Fry them until golden brown.
Drain the prepared meatballs on paper and serve with the cold cream sauce.
