Required products :

  • 500 grams of sliced ​​pumpkin
  • 600 milliliters of coconut milk
  • 2 teaspoons pecans
  • 2 dates
  • 1 teaspoon vanilla extract
  • 50 grams of butter, melted and cooled
  • 1/4 tea cup coconut flour
  • 3 eggs, 1 of them divided into egg white and yolk
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon ground cloves
  • 1 teaspoon ginger powder
  • grated peel of 1/2 orange
  • 1/3 tea cup of maple syrup
  • 1/4 cup pumpkin seeds
  • coconut yogurt for serving (or other milk cream of your choice)

Method of preparation :

Boil the pumpkin in coconut milk on low heat for about 20-25 minutes until soft. Cool.

Meanwhile, grind the dates with the pecans in a robot. Add vanilla, butter, coconut flour and 1 egg white, season with a pinch of salt. In a greased pan with a removable bottom, press the resulting filling on the bottom and walls. Punch with a fork and bake at 180 degrees for 15-20 minutes.

Mash the pumpkin, spices, orange peel and 1/4 cup maple syrup. Add to the mixture the 2 whole eggs, the yolk and stir.

Fill the crispy baked loaf with the filling and bake for another 45 minutes.

Drizzle the pumpkin seeds with the maple syrup and bake on baking paper for 8-10 minutes until caramelized and golden.

When serving, add coconut yogurt or other milk cream on the pie if desired, sprinkle with caramelized pumpkin seeds.
