Method of preparation :
Heat olive oil in a large saucepan over medium heat. Add the onion and celery and cook, stirring often, until soft and browned. Then add the flour, oregano, salt and pepper and cook for 1 minute, stirring. Then pour the chicken broth and milk and let the liquid boil, stirring constantly.
Add the pumpkin, potatoes and corn and stir. Let the soup simmer. Stir occasionally. Cook until the potatoes are soft. Then add the ham and continue to stir for about 2 minutes.
Serve the finished soup with chopped green and fresh onions and sprinkle with cheese if desired.
You can store in the refrigerator for up to 3 days, and before consumption it is good to warm to a medium low temperature.
