Beat the quail eggs in a deep bowl, then add a teaspoon of sugar, salt and mustard. Beat again, using a mixer or blender, you should get a homogeneous mixture.
Then start adding literally one drop of the oil without stopping the beating. When the fat is well absorbed from the rest of the mass, start pouring the oil in a thin stream.
Beat until you get a thick homogeneous sauce, to which add two tablespoons of freshly squeezed lemon juice. Once broken, the mixture will turn a little white.
The last step is to give a pleasant taste with the help of Provencal spices. Put them in the mayonnaise and transfer it to a dry jar.
You can store in the refrigerator for no more than two weeks.
