How To Cook Quick Homemade Kefir Cheese With Eggs, Spices And Garlic - Recipe

Required products :

1 liter of kefir
1 liter of fresh milk
6 eggs
1 teaspoon hot red pepper a
pinch of cumin
1 clove of garlic a
small bunch mix of green spices (dill, parsley, green onions ...)


Method of preparation :

In a suitable saucepan pour the milk and kefir, place the dish on the stove. Without allowing the liquid to boil (but it must be hot), pour in a thin stream of lightly beaten eggs with salt. Then bring the combination to a boil and let it cook for a few minutes on low heat, stirring until the whey separates. Then remove from the heat and 1-2 minutes later add the hot red pepper, a pinch of cumin, finely chopped green spices, crushed garlic cloves (or more if you prefer).
Pour the resulting mixture into a colander covered with two layers of gauze. Flatten the surface with a spoon and tighten, twisting the fabric. Once the liquid has drained, unroll the gauze and cover the cheese with it. Place a bowl on top and some weight on it. Put the cheese in the refrigerator for a few hours, then you can serve with black bread and tomatoes.
