This healthy recipe for vegetarian lasagna is made with quinoa, vegetables, cheese and spices. The dish is very nice, fragrant and light, so you will have room for dessert. To save time, use canned homemade tomato sauce or buy one from the store.
Necessary products:
* A tea cup is used to measure the quantities.
Method of preparation:
Grease a baking tray with olive oil. Boil the water and quinoa in a saucepan, then reduce the heat, cover and cook for 15 minutes or until soft. Evenly distribute the quinoa on the bottom of the prepared tray.
Preheat oven to 180 degrees.
Heat the olive oil in a saucepan over medium heat and fry the onions until browned. Pour the mushrooms, garlic and tomato sauce and stir until the mushrooms soften, then remove from the heat.
Mix until homogeneous in a bowl the egg, cottage cheese, parmesan, basil and oregano.
Spread 1/3 of the tomato mixture on the quinoa, arrange the zucchini on top, spread with the cottage cheese mixture, then with the tomato mixture. Spread the spinach, the remaining tomato mixture on top and sprinkle with grated mozzarella. Bake the lasagna for 35-40 minutes or until lightly browned at the edges and the cheese melts.
Remove from oven, allow to cool for 10 minutes, slice and serve.
