Cut the sweet potatoes and red beets into large cubes. Put them in a steamer (or use the appropriate attachment for an ordinary pot). Let them simmer for 15 minutes, then add the broccoli roses and kale. After 2-3 minutes all the vegetables should be ready.
Season the chickpeas with salt, red and black pepper.
Arrange the vegetables in a large plate, dividing them without mixing. Add the hummus, sliced avocado, chickpeas and cooked quinoa.
Drizzle with cashew dressing.
