How To Cook Quinoa With Vegetables And Feta Cheese In The Oven - Recipe

Required products :

  • 2 large potatoes, peeled and diced
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1-2 tablespoons olive oil
  • 1 large red onion
  • 3 cloves garlic, chopped
  • 1 teaspoon ground cumin
  • 2 peppers, cleaned and chopped
  • 1/2 cup corn
  • 1 cup frozen peas
  • 125 grams of cherry tomatoes
  • 1 handful of coriander, chopped
  • 200 grams of diced feta cheese
  • 1 handful of parsley, chopped

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 200 degrees.

Fill a saucepan with water, add the diced potatoes and bring to the boil, then reduce the heat and cook until soft. Strain and set aside.

Cook the quinoa according to the instructions on the package, using the vegetable broth instead of water.

Put olive oil in a pan with a non-stick coating and fry onions, garlic, cumin and peppers until onions begin to soften. Add the quinoa, potatoes, corn, peas, tomatoes and coriander to the dish and cook for 2-3 minutes, stirring occasionally.

Pour the fried mixture into a large baking tray measuring 22x32 cm and garnish with cubes of feta cheese. Bake for 20 minutes in a preheated oven for a few minutes until done.

Sprinkle with chopped parsley and serve.
