Necessary products:

1 liter of fresh milk (low fat)

2-4 tbsp. freshly squeezed lemon juice

150 grams of sugar

350 ml of water

Method of preparation:

Put the milk on the stove and bring to a boil. Slowly add 2-3 tablespoons of lemon juice, stirring constantly. After a minute, add another teaspoon of it. The milk will cross and the curd will separate from the whey. Strain with gauze, rinse under running warm water, tie the gauze and squeeze well. Crush the curd on the kitchen counter and start mashing it with your hands until a homogeneous mixture is obtained (your hands are slightly oiled).

Form small balls the size of a walnut or smaller. They must be smooth, round and free of bumps and cracks.

Preparation of sugar syrup: pour water into a saucepan, add sugar to it. Bring to a boil, stirring constantly (let boil for 5 minutes). Put the made balls in the prepared boiling syrup. Leave a little space between them, because they will increase their volume 2-3 times later. Close the pot with a lid and let it cook for 10-15 minutes. Then put the container in cold water, close it and let the "balls" stay in it for a day, for example. During this time, they will be soaked in the syrup. They are ready to serve.
