How To Cook Ratatouille With Eggplant, Zucchini, Tomato And Garlic - Recipe

Required products :

  • 1 small head of red onion, cut into cubes
  • 2 cloves garlic, pressed
  • 1 small eggplant, cut into cubes
  • 1 medium zucchini, cut into slices
  • 1 medium-sized yellow zucchini, cut into slices
  • 1 large diced tomato
  • 3 tablespoons olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Method of preparation :

  • Preheat oven to 220 degrees.
  • In a large bowl, combine onions, eggplant, zucchini and garlic. Stir.
  • Sprinkle with olive oil, basil, oregano, salt and freshly ground black pepper. Stir again to taste evenly.
  • Transfer to a greased pan, distributing them in one layer without overlapping.
  • Bake for 20 minutes and add the diced tomatoes.
  • Return the vegetables to the oven for another 15-20 minutes, stirring occasionally.
  • Serve the vegetable ratatouille warm with your favorite sauce or other, according to taste.
