Necessary products:

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 1 red pepper, cut into strips
  • 2 cloves garlic, chopped
  • 1 tablespoon rosemary, chopped
  • 1 eggplant, sliced
  • 2 zucchini, sliced
  • 400 grams of canned tomatoes
  • 1 teaspoon balsamic vinegar
  • 4 eggs
  • handful of basil leaves

Method of preparation :

Heat olive oil in a deep frying pan. Add onion, garlic, pepper and rosemary. Fry for 5 minutes until the onion is soft. Add the eggplant and zucchini. Two minutes later add the tomatoes. Fill the can of tomatoes with water and pour into the pan. Simmer for 40 minutes under a lid, then for 20 uncovered.

Season with balsamic vinegar and form 4 indentations in the mixture, in which beat one egg. Season with salt and pepper. Put the lid on and wait 2-5 minutes for the eggs to cook to the desired firmness.

Sprinkle with basil and serve.
