Necessary products:

 

  • 1 green and 1 yellow zucchini
  • 2 eggplants
  • 500 grams of tomatoes
  • 150 grams of chopped mushrooms
  • 1 grated carrot
  • chopped celery
  • 1 onion, finely chopped
  • one green and one red pepper
  • 1 hot pepper
  • 6 fresh basil leaves
  • 50 milliliters of olive oil
  • 10 grams of crushed garlic
  • salt, pepper
  • smoked paprika
  • red hot pepper
  • dry oregano

 

Method of preparation:

 

Cut the zucchini, eggplant and tomatoes into circles and add salt. Set aside.

 

Meanwhile, fry the mushrooms and roast the peppers.

 

Peel a squash, grate it and put it in a blender.

 

Add carrot, celery, onion, hot pepper, basil and mash until smooth. Pour the mixture over the mushrooms and stir.

 

Grease a pan with oil and spread the vegetable mixture. Arrange the zucchini, eggplant, tomatoes, alternating them by color and type.

 

Mix olive oil with crushed garlic and pour the aromatic oil over the vegetables.

 

Season with salt, pepper, smoked and hot pepper and sprinkle with oregano. Preheat oven to 200 degrees and bake for 40 minutes. Cool, spread the dish on a plate and serve. Optionally garnish with boiled white rice.
