If you are a traditionalist, use fresh red peppers to make homemade ketchup. Season with spices to your liking. Grind tomatoes, sweet and hot peppers using a blender or meat grinder. Pour the mixture into a saucepan, add salt, sugar and pepper (cayenne or chili).
Place the pan on the hob and reduce the temperature after the mixture boils. Boil for 40 minutes. About 10 minutes before removing the ketchup from the heat, add the crushed garlic and stir.
Distribute the prepared homemade ketchup in sterilized jars and close.
Wash the tomatoes well, put them in boiling water for 1-2 minutes, then cool quickly. Peel a squash, grate it and squeeze the meat. Peppers and parsley. Pour the mixture into a suitable saucepan, add the sugar, salt and then allspice, bay leaf and dill seeds. After 5 minutes, remove the bay leaf.

Bake on a grill pan with the skin facing up, then turn to bake on the other side. Then place them in a bag, allow to cool and remove the peel. Cut the roasted peppers into cubes.
In a large saucepan, mix the peppers with the wine vinegar, onion, apples, hot peppers, bay leaf and thyme sprig. Pour 600 milliliters of water into the pot and bring to the boil over medium heat. Then lower the temperature and let the mixture simmer for 30-40 minutes or until the vegetables are soft.
Remove the bay leaf and thyme from the mixture and puree the vegetables. Pass the resulting mixture through a sieve and remove the separated pulp. Transfer the puree to a clean bowl along with the sugar and spices. Let the ketchup simmer on low heat for about 45-60 minutes or until thickened.
Remove the pan from the heat and fill the hot ketchup into sterilized jars or glass bottles. Allow to cool before sealing. Can be stored in a cool, dark place for up to 3 months. Once the jar or bottle of ketchup is opened, it should be stored in the refrigerator.
This ketchup is suitable for serving as a side dish to baked or fried fish, potatoes or a meat dish.
