Burek peppers are a delicious traditional Bulgarian dish. They are prepared very quickly and easily. The main ingredient is roasted peppers, which are stuffed with cheese or cottage cheese and eggs, flavored with spices and herbs (parsley, dill or others). Breaded and fried to form an appetizing crispy crust. The dish can be served with milk sauce or salad. If you want to cook them without frying, roll the roasted peppers in breadcrumbs and bake in the oven. In some parts of the country the dish is called peppers burek. Here are some recipes on how to make burek peppers.
Clean the peppers from the tails and seeds, grease them with a little oil and bake in the oven until soft. When cool enough, peel them. You can use ready-made roasted peppers purchased from a store.
Mash the cheese with a fork, add chopped dill or parsley, peeled and finely chopped tomatoes, crushed garlic and egg white. Season with salt if necessary. Fill the roasted peppers with the resulting mixture, but do not overdo the stuffing.
Beat the other egg in a bowl with a pinch of salt and other spices of your choice and taste.
Roll the stuffed peppers in flour, then dip in the egg and finish with breadcrumbs. Fry them in hot oil on both sides until you get an appetizing yellow crust.
Serve garnished with parsley leaves, a slice of lemon or vegetables.
Necessary products for the preparation of lazy burek peppers:
Place the peppers in a pan and then in an oven preheated to 220-230 degrees. Bake no more than 15-20 minutes. The peppers must not burn or burn completely; better to stay unbaked than toasted (if they are too soft, they will tear). Put them in a bag and tie.
Mash the cheese with a fork, add 1 egg and stir. Peel the cooled peppers. If it is difficult to peel, you can afford part of the peel to remain, it will not significantly change the taste of the dish. Cut off the top of the pepper and remove the seeds. Fill with cheese, but not too thick. Then roll in beaten egg and then in breadcrumbs.
Heat oil in a pan, put the peppers and fry until golden. Turn and fry on the other side.
This dish is most delicious when consumed hot.
To prepare the sauce, mix the garlic with the spices, add the yogurt, oil and vinegar. Stir well and refrigerate before serving.
Roast, peel the peppers and clean them from the seeds and stalks. Grate the cheese, yellow cheese and tomatoes in a bowl. Add 100 milliliters of water if the mixture is too thick. Beat one egg into the mixture and season with spices, stir and fill the roasted peppers with the resulting mixture.
Put the breadcrumbs in one bowl and beat 4 eggs in another with a pinch of salt and a pinch of baking powder.
Heat the fat in a pan. Dip the already stuffed peppers in the bowl with the eggs, then in the bowl with the breadcrumbs and again in the egg mixture. Fry in hot fat on both sides.
Serve the burek peppers with the milk sauce.
Mix the eggs with the curd and, if desired, add the shredded cheese. Add the chopped parsley, season with black pepper, salt and other spices as desired. Fill the peppers with the resulting mixture and roll them in breadcrumbs. Arrange them in a greased pan and bake in a preheated 180 degree oven for about 15-20 minutes.
Serve with milk sauce if desired.
