If it smells like roasted pumpkin with honey and walnuts, we all know that autumn is already here and winter is approaching. Pumpkin can be used both as a fruit and as a vegetable. As it is low in calories, it is suitable for consumption by people aiming to lose weight and for all those who strive to eat healthier. Baking is probably the best thing you can do with pumpkin, as the process itself improves the taste and gives the fruit and vegetables a soft and creamy texture. The use of spices such as cinnamon, cloves and nutmeg complement the taste and give the sweet temptation a very pleasant aroma.
Turn on the oven to preheat to 200 degrees. Wash, peel and clean the pumpkin, cut it into large pieces. Arrange in a suitable tray, spray with water (1-2 tablespoons for the specified amount), put a little salt and close the container with a lid or cover with foil. Place in the oven for 20-30 minutes. Baking time depends on the thickness of the pieces and how soft you prefer the pumpkin to be. If you add more water, you will get a boiled pumpkin or with a puree-like consistency - a matter of taste.
Melt the butter, mix it with the honey and cane sugar if using. Stir until smooth. Add the crushed walnuts and finely chopped sage, if using. Remove the pan from the oven, grease the pumpkin with the honey-butter mixture and return to bake for another 15 minutes.
You can stop here with the preparation of the pumpkin and eat it. Another option is to make an extra sauce. To do this, remove the pieces from the pan, arrange them on a plate. Pour the remaining liquid into the pan in a hot pan and add a pinch of sugar (preferably cane). Stir vigorously for 15 seconds and remove from the heat. You already have caramel-honey syrup. Pour it over the finished pumpkin.

Preheat oven to 180 degrees.
Wash, cut and clean the pumpkin from the seeds. Cut in half, then into thin slices.
In a bowl, mix the brown sugar, cinnamon, nutmeg, allspice and cloves, mix well.
Dip each piece of pumpkin in the mixture and place in a baking tray. Sprinkle with honey and bake for about 45-60 minutes or until the pumpkin pieces are caramelized and softened. Baking time will vary depending on the thickness of the pumpkin.
Roast the walnuts in a pan over a moderate heat until crispy and pleasantly fragrant. Remove the pumpkin from the oven and serve with the walnuts. Sprinkle with more honey if desired.
