Necessary products:

  • 1 tablespoon olive oil
  • small lump of butter (about 1 teaspoon)
  • 1 onion, finely chopped
  • 2 crushed garlic cloves
  • 400 grams of rice
  • 250 milliliters of white wine
  • 1.2 liters of vegetable broth
  • 100 grams of frozen peas
  • 125 grams of asparagus, finely chopped
  • 40 grams of butter
  • 80 grams of parmesan
  • 150 milliliters of oil
  • 100 grams of flour
  • 2 eggs
  • 100 grams of bread crumbs

Method of preparation :

Put olive oil and a lump of butter in a saucepan. Fry the onion until soft and translucent. Add the garlic and fry for 2 minutes. Reduce heat to medium and add rice, stir and fry for 30 seconds.

Pour the wine, when pouring, bubbles should be obtained to heat enough from the heat. Stir and bring to a boil. Start adding the broth in portions. Once you have about 150 milliliters of broth left, add the vegetables, parmesan, butter and half a teaspoon of black pepper to the rice. Stir and add the broth, cook for another 10 minutes to absorb the liquid, then pour in the rice on a plate and allow to cool completely.

When the rice is completely cold, it will easily form into meatballs - make a total of 16 pieces.

Divide the flour, eggs and bread crumbs into 3 separate bowls.

Roll the meatballs in the flour, then in the eggs, and finally in the crumbs. Fry in hot oil for 2 minutes on each side. Drain on paper and serve with your favorite sauce.
