Peel the aubergines, chop them finely, along with the peppers and tomatoes and fry them in the butter. Add the mushrooms, garlic, onion, salt, black and red pepper.
Season with chopped parsley and cook on low heat for 10 minutes. Boil the pasta in boiling water, add salt and strain when ready.
Pour the rigatoni into a plate and garnish with the vegetable sauce. Sprinkle with fresh parsley and serve.
