How To Cook Risotto With Mushrooms, Spinach And Parmesan - Recipe

Required products :

  • 1 tablespoon olive oil
  • 600 grams of mushrooms, cut into slices
  • 3 tablespoons butter
  • 3 cloves garlic, pressed
  • 1 small onion, finely chopped
  • 3 tablespoons flour
  • 1 1/2 teaspoons fresh milk
  • 3 teaspoons chicken broth
  • 1 1/2 tea cups long grain rice
  • 1/2 teaspoon salt
  • freshly ground black pepper
  • 3/4 tea cup grated Parmesan cheese
  • 250 grams of frozen spinach, thawed and drained

For sprinkling :

  • grated parmesan
  • fresh parsley, finely chopped

Method of preparation :

 

  • Heat olive oil in a large skillet with a non-stick coating over high heat.
  • Stew the mushrooms for about 3 minutes until soft and transfer to another bowl.
  • Reduce the heat and melt the butter.
  • Stew the garlic and onion for 3 minutes and add the flour.
  • Stir and after about 1 minute add the milk and broth. Stir again.
  • Increase the temperature to medium and add the rice, salt and pepper.
  • After boiling, let the risotto simmer for 8-10 minutes or until the rice is ready, according to taste. If necessary, add a little water.
  • Remove the pan from the heat, add the spinach, parmesan and mushrooms and stir to distribute evenly.
  • Serve the risotto hot, sprinkled with grated Parmesan cheese and fresh parsley.
