Method of preparation :
Wash the eggplant, then cut it lengthwise into slices. Add salt and put in a colander for half an hour. Then rinse and dry and fry in olive oil. Remove on paper to drain off excess fat that they have absorbed during frying.
Other options for their preparation:
smear the raw slices with olive oil and bake them in the oven until soft (about 15 minutes at 180 degrees, the exact time depending on the thickness of the pieces).
grease the eggplant slices with oil / olive oil and bake them on a grill pan.
Tomato sauce
Peel and finely chop the onion and garlic (you can mash the garlic with a press).
In a thick-walled saucepan or skillet, heat the butter and pour over the onions. Add a little salt and fry until soft. Then add the garlic and about a minute later add the peeled and coarsely chopped tomatoes (if you use canned in its own juice, pour the liquid). Stew, stirring and mashing with a wooden spoon for about minutes.
Add a little salt, sugar to taste, freshly ground black pepper, thyme if desired, stir and simmer for about 15 minutes.
Try the prepared sauce and season further if desired. Remove the thyme stalks, and the rest you can puree until smooth, if you prefer.
Wash and dry the chicken breasts, rub them with pepper and salt. Heat olive oil or vegetable oil in a pan and fry the meat in it until golden (about 5-7 minutes on medium heat). You can grill in a pan, but first grease the breasts with oil.
Grease the bottom of a suitable pan with oil and arrange the eggplant pieces. Pour half of the sauce over them and add the chicken. Spread the remaining sauce on it and arrange large circles of mozzarella (or grate the cheese).
Bake the dish at 180 degrees in the oven for about 15 minutes.
When an appetizing crust forms, serve it with a garnish of rice or pasta, garnish with basil leaves.
