How To Cook Roast Chicken In Marinade With Yogurt, Soy Sauce And Mustard - Recipe

Required products :

  • 1 whole chicken (better not to freeze)
  • 1-1.5 liters of water
  • salt and pepper to taste
  • 1.5 lemons
  • 2-3 tablespoons soy sauce
  • 200 grams of yogurt
  • 1-2 tablespoons mustard seeds
  • 2 cloves garlic
  • spices to taste: nutmeg, paprika, Provencal herbs


Method of preparation :

Dissolve 3-4 tablespoons of salt in 1-1.5 liters of water at room temperature and put in it the pre-washed whole chicken. Leave it in the liquid (it should cover it completely) for 2-3 hours (minimum 60 minutes). Then take the chicken out of the water, dry it.

Squeeze the juice of a lemon and a half, mix it with soy sauce and generously spread the chicken inside and out with the marinade. Sprinkle with ground black pepper, put in a tightly closed container in the refrigerator, leave for 6-8 hours.

An hour before cooking the chicken, take it out of the fridge and spread it inside and out with a sauce made by combining yogurt with mustard, spices and crushed garlic cloves.

Place in a pan and let marinate for about an hour. Then place in a preheated 200 degree oven, covered with a sheet of aluminum foil. Forty minutes later, remove the foil, reduce the temperature to 180 degrees and cook the chicken for another hour, turning it several times in the meantime and watering it with the juice that separates.
