How To Cook Roast Chicken In White Wine With Prunes And Olives - Recipe

Required products :

  • 1/2 teaspoon olive oil
  • 1/2 teaspoon white wine vinegar
  • 1 teaspoon pitted prunes
  • 1/2 teaspoon pitted green olives
  • 1/2 teaspoon capers
  • 6 bay leaves
  • 10 cloves garlic, pressed
  • 2 tablespoons dried oregano
  • 1 tablespoon dried rosemary
  • 1/2 teaspoon coarse salt
  • 1/2 cup ground black pepper
  • 1 kg of chicken, cut into portions
  • 1 teaspoon dry white wine
  • 1/4 tea cup brown sugar
  • 1/4 tea cup fresh parsley, finely chopped

Method of preparation :

  • In a large bowl, combine olive oil, vinegar, prunes, olives, capers, bay leaves, garlic, oregano, rosemary, salt and pepper. Stir well
  • Add the chopped chicken and stir to coat evenly with the marinade. Cover the bowl and refrigerate for 6 hours.
  • Preheat oven to 180 degrees.
  • Arrange the chicken in a large pan, placing it skin side up.
  • Drizzle with the marinade and sprinkle evenly with the brown sugar.
  • Bake for 50-60 minutes, periodically watering it with sauce.
  • Arrange the roasted chicken on a plate and garnish with prunes, capers and olives.
  • Drizzle with the sauce, sprinkle with fresh parsley and serve.
