How To Cook Roast Chicken On A Bed Of Polenta And Zucchini Flowers - Recipe

Required products :

  • 1,400 pounds of whole chicken
  • 1 teaspoon white wine
  • 1/3 tea cup olive oil
  • 1 teaspoon dried rosemary
  • 2 cloves garlic, thinly sliced
  • 1 handful of oregano
  • 10 zucchini flowers, along with the small zucchini
  • boiled porridge (polenta)

Method of preparation :

Preheat oven to 200 degrees.

Cut the chicken lengthwise through the middle of the breast. Put it in a pan and grease it, add the wine, olive oil, rosemary, garlic and oregano.

Season with salt and bake for 45-50 minutes, until done.

Peel the flowers from the zucchini, cut the latter into thin circles. Remove the chicken from the pan and roll the flowers in the juices and fat left in the pan from roasting the meat.

Put the chicken on a bed of polenta, sprinkle with flavored flowers and chopped zucchini.

Pour a little of the juice left in the pan to flavor the porridge.
