Required products :

  • 1 duck, well cleaned, washed and dried
  • 2 large carrots, cut in bulk
  • 2 onions, peeled and cut into quarters
  • 2 cloves garlic, peeled and halved
  • 2 bay leaves
  • 1 teaspoon grated orange peel
  • 1 tablespoon salt
  • freshly ground black pepper

Method of preparation :

  • Turn the duck breast upside down and separate the skin with your fingers, being careful not to pierce it.
  • In a small bowl, mix the salt, pepper and grated orange peel.
  • Rub the whole duck with the spice mixture.
  • Spread the chopped onions, carrots and garlic on the bottom of a pan. Add the bay leaves.
  • Place the duck on top of the vegetables and bake in a preheated 200 degree oven for about 25 minutes.
  • Reduce the temperature to 130 degrees and bake on low heat for about 2 hours, pouring the duck with the sauce released in the pan every 20 minutes.
  • Again, increase the oven temperature to 200 degrees for about 20-25 minutes, pouring the sauce over the meat every 5 minutes until a golden and crispy crust forms.
  • Let the duck rest for 20 minutes before serving.
