Required products :

pork ears (as you prefer)
1 onion
5 cloves
bay leaf
black pepper grains
smoked red pepper
freshly ground black pepper
salt
oil

Method of preparation :

Clean and wash your ears. Put them in a saucepan, pour cold water, add salt.
Place the pan on the hob, bring the water to a boil and remove the foam. Then put the cloves and black peppercorns, also the whole onion (peeled) and the bay leaf. Boil the ears to the desired readiness (2 hours or more), then drain the aromatic broth.

Dry the ears and sprinkle with ground red and black pepper on both sides. Bake in a pan with a little fat for about 4-5 minutes on both sides.

 

You can serve with a garnish of sauerkraut, mustard and fragrant toasted pieces of black bread.
