How To Cook Roast Pork Shank With Garlic And Onion In Beer - Recipe

Required products :

  • 1 large shank or 2 small ones (about 600 grams each)
  • 1 liter of dark beer
  • 2 onions
  • 10 - 12 cloves of garlic
  • 6-8 grains of allspice
  • 6-8 grains of black pepper
  • 3-4 bay leaves
  • 1-2 stalks of coriander
  • 1 sprig of thyme
  • cumin seeds optional
  • salt to taste

Method of preparation :

Pour the beer into a saucepan, place on the stove. Put the bay leaves, peppercorns and allspice, chopped coriander and thyme, cumin, two chopped garlic cloves, salt to taste. When the marinade boils, remove from the heat and allow to cool.

Clean, wash and dry the shank. Cut the remaining garlic cloves in half lengthwise and place them in the leg in which you made the incisions. Rub the surface with the aromatic vegetables.

Peel an onion, cut it into circles and pour it on the bottom of the dish in which you will marinate the shank. Place the latter on the onion, pour over the marinade and close with a lid. Let stand overnight or longer. If the liquid does not cover the foot, turn it periodically.

Then remove the lid, cover the form with foil and place in an oven preheated to 220 degrees for 30 - 40 minutes. Then reduce the temperature to 180 degrees and let the shank bake until ready (about 1.5 hours). During this time, remove the foil 3-4 times and pour the marinade over the dish in the bowl.

15 minutes before the foot is ready, remove the foil so that an appetizing crust can form on the surface.

When you take it out of the oven, cover the pan again with foil and wait 10-15 minutes before serving.

An ideal side dish is sauerkraut or fresh cabbage.
