How To Cook Roasted Beets, Mushrooms And Zucchini With Quinoa - Recipe

Required products :

  • 3 medium beets, cut and peeled
  • 1 small zucchini, sliced
  • 1 teaspoon halved small mushrooms
  • 2 teaspoons water
  • 1 cup red or white quinoa, soaked and drained
  • 1/2 teaspoon white wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley
  • 1 teaspoon fresh rosemary
  • 1 teaspoon fresh oregano
  • 1 teaspoon Dijon mustard
  • 1 clove of garlic, finely chopped
  • 30 grams of goat cheese

Method of preparation :

Preheat oven to 200 degrees. Lightly grease a pan and arrange the beet slices in it, grease them with a little fat of your choice. Cover with foil and bake for 25 minutes. Remove the foil, add the zucchini and mushrooms, season with salt and pepper and bake uncovered for 10-15 minutes until the vegetables are ready.

Meanwhile, put the water and quinoa in a saucepan and season. Boil it for 15 minutes, if necessary strain it. Allow to cool.

Combine vinegar, olive oil, spices, mustard and garlic in a jar, shaking vigorously to get the dressing.

Pour it over the vegetables and stir. Serve on the quinoa, and finally sprinkle with goat cheese.
