Cut the pumpkin into medium-sized pieces (along with the peel), arrange them in a tray on parchment paper and bake in the oven for 35 minutes at 180 degrees.
Cool the finished pumpkin, scoop out the soft inside with a spoon and mash it until you get a puree or blend. Add a little honey, stir and leave for 10 minutes. During this time, the juice will separate, drain it.
Roast the walnuts in a dry pan for three minutes, stirring. When cool, mix with honey, pour over the puree and serve the dessert.
